Weetabix Loaf

Weetabix loaf - a delicious fruit cake that's ridiculously easy, wholesome with infinite varieties!

Part of my Low Fat Sweet Treats range, you can be healthy and indulgent at the same time! 

The Weetabix factory is only a few miles from my home so my children were brought up on this and we never tire of the different fruits and flavours you can use.  

It's at home with a coffee, a tea party or a picnic!

Weetabix Loaf

Ingredients

  • 2 Weetabix, you can vary the flavor
  • 1 cup dried fruit of your choice: here I've used raisins and apricots, you can use cranberries, date and walnut, raisin and grated carrot etc.
  • 1 cup brown sugar, any type
  • 1 cup milk
  • 1 cup self raising flour
  • 1 tsp mixed spice
  • 1 egg


Method

Break up the Weetabix in a mixing bowl, add fruit, sugar and milk, mix well, cover and place in the fridge for several hours. It's easier to leave overnight.

In the morning all you do is stir in one beaten egg, then add the flour and mixed spice. Mix well, pour and spread in a lined loaf tin. Bake for 50 mins at 180C or 350F. My oven cooks a little hot so I turn that down just a fraction. 

Make it special with exotic dried fruits! Enjoy! Serve sliced by itself or with butter and/or jam.
