This is currently my husband's favorite soup, and he makes it! There's nothing to it!

Peel and slice leeks. Roughly chop onion and potatoes. Heat oil in large pan then add onion and leeks, cook gently for 5 - 7 minutes. Stir in potatoes, cook for another 2 - 3 minutes.
Pour in the stock and bring to boil, then lower heat and simmer for about 20 minutes. Blend with stick blender or in liquidizer and stir in milk/cream if using. Season with salt and pepper and sprinkle with little chopped saute leek and black pepper.
NB We prefer not to use the milk but add a little more stock.
