'Syn Free and Scrumptious' brings you a few of my favorite recipes. This website is all about how to FEEL GOOD and LOOK GOOD and healthy eating is very much a part of looking after yourself.

Weight creeps on much more easily as we get older and I'm not good at exercise so I have to watch what I eat. But while I like to keep my weight under control I don't want to feel that I'm on a diet!

Healthy eating suits my digestion and the Slimming World way of eating suits my taste so I usually base my meals around that system. 'Syns' are likely to be foods that are high in fat and sugar, and are better kept to a minimum. 

I'm starting with a couple of recipes that certainly don't look or taste as though you're watching your waistline!

Syn Free Chocolate Cake

Why is a CHOCOLATE CAKE recipe on a Color and Style website?

I love to eat healthily and I love chocolate cake - so what better way to enjoy without gorging on fat and sugar! 

I like my food and you know us Brits we need something for 4 o'clock tea-time - so what's better than a CHOCOLATE CAKE?

Bizarre ingredients I know but it works! Sandwich two for a celebration cake with a low fat filling; Nutella or sugar free jam, on a beautiful cake plate.

  • 400g tin drained chickpeas
  • 3 eggs whisked
  • 1 tbsp vanilla essence
  • 1 tbsp golden syrup or maple syrup
  • 28g cocoa powder
  • 1 cup sweetener
  • 1 tsp baking powder

Blitz all the ingredients together in a blended until smooth and pour into a greased microwaveable quiche or porcelain flan dish about 18cm. Microwave on high for about 7 minutes.

It's obviously low fat but if you're following Slimming World, it's 1 syn for the syrup, 1 syn for the cocoa, 1/2 syn for baking powder; actually it's neglible for just a slice.  

There's some discrepancy over whether the chickpeas should be synned or not, but to me, it's like eating a portion of chickpeas with my lunch and it keeps me going until dinner time!

Syn Free Pancakes

This is my version of an irresistible recipe from the fabulous cooks at the Pinch of Nom.

Sandwiched together with fat free fromage frais, banana and strawberries the pancakes are completely syn free.

My grandchildren think they're even more amazing with a dash of chocolate sauce!

  • 40g oats blitzed finely
  • 2 eggs
  • 1 tsp vanilla paste
  • 1/2 Tbsp granular sweetener
  • 1/2 tsp baking powder
  • 1/4 cup Greek fat free yogurt

Mix all ingredients together well and stand for 10 minutes. Drop good tablespoons into a hot non-stick frying pan and when one side is cooked, flip them over. Pile up when hot or cold.

Instead of bottled sauce I mix a little cocoa powder with a similar amount of golden syrup and microwave for 30 seconds or so adding a spot of water if necessary.
